I once found a "recipe" for a very very quick version of something that is pretty close to mayonnaise. What you do is throw an egg (whole[1], not just the yolk), half a cup of oil, salt pepper vinegar and mustard into a blender, and whizz up for a few seconds. Suprisingly effective.
