Depends who you're working for, if you're applying to the Civil
Service/Police/MoD, etc and they want to run a security check for you,
then yes they would find out and they'd want to know why you didn't
tell them.

You only need use your current name, as you have to give ID details,
such as a driving licence or passport and from that they know what
your old name was, when you change your name and apply to have your
driving licence and or passport changed to your new name, it
automatically links on some othe government computer systems, such as
the police national computer and the CRB database.
