There many places for you to see/meet Hmong. Check out Golden Bowl,
Pho Newhope, or "Hmong alley" at the Fresno County Swap Meet. Those
are just a few places. About 1/3 of all asians you meet in Fresno
will be Hmong.
As for having only 2 days, spend one day visiting family/friends and
the underground garden. For the next day go white water rafting.
Save the National Parks for another time because there will be too
many people during the summer. If you want to visit the parks, save
it for off season when you don't have to fight the crowd.
