Among those of us of French-Canadian descent, Tourtiere (pork pie) is a
traditional dish for the holidays. In my family, it was (and still is) a
New Year's Day treat. It's basically a hearty, spicy meat pie. Very
delicious, although for some it's an acquired taste.
My recipe, passed down from my grandmother (quantities are per pie):
1 lb ground meat (I prefer a mix of beef and pork, it's not so greasy)
1 potato, peeled but whole
1 medium onion, chopped
3/4 cup water
Combine ingredients in a suitably-sized pan. Simmer on low to medium heat
until the potato is done. Let the mix cool some, then mash using a potato
masher. Salt and pepper to taste. Then add:
1/2 tsp cinnamon
1/2 tsp cloves
1/4 tsp garlic powder
Blend well.
The mix is used as the filling in a standard two-crust pie. Bake the pie at
425 F until the crust is golden brown.
Serve with pickles, olives, chips, etc.
