The "purest" form of poker is any heads-up form that creates meaningful
odds (ie. the bet sizes are not overly small relative to the pots) and
that encourages action over multiple streets. Ideally played in a
freeze-out format.

Heads-up PL holdem would probably be the best candidate, shortly followed
by NL if the stacks were reasonable. Some sort of heads-up half or
three-quarter pot stud or razz would be second. Limit version of various
non-split-pot games would be next.

Probably not the answer you wanted, but it's the truth.
