I can's speak for the ranges as my experience is only with gas stove
tops.
I previously owned a 42" 6-burner Thermador and it didn't put out
enough heat (and while I did like the low duty cycle simmer, it still
would burn stuff if you didn't put a diffuser under the sauce pan).
I bought a Viking 6 burner (36") and the quality was awful - I sold it
for half price to somebody who got a good bargain. Also, since the
controls are on the top, the 6 burners are very close together and it
is hard to use more than three burners at a time.
I replaced the Viking with a 36", 6-burner Wolf Rangetop, and after
three years I am very happy with it. There is one quirky microswitch
that occasionally fails to turn on the spark igniter (Wolf says that
the microswitches are adjustable, but it looks like a couple of hours
of work to get at them and probably more to reinstall). All six burners
put out a legit 16,000 BTU/hr and throttle back to about 500 BTU/hr for
simmer. The dual venturi arrangement does a nice job of maintaining a
constant fuel/air ratio over the heat range of each burner (there are
two independent rings for each burner - one big and one small - each
with a separate venturi).
