The place I used wouldn't sell Viking, but had everything else:
Garland, Wolf, Traulsen, Sub Zero, AGA, Jade, Russell... No Viking. As
he explained it... he had a reputation to protect.

You need a big budget for big ventilation. That's gonna require a
multi-fan Vent-A-Hood and somebody who knows how to run 12" duct. You
need two ducts. The system requires much planning, a short run, and
therefore is almost always installed on an outside facing wall. Also
the vent hood needs to be installed lower than is pictured in your
kitchen brochures. Be wary of brochures. The marketing folks don't
cook, they decorate.

You didn't mention induction. Look into it. Wolf has a decent counter
flush unit.
