What about Ritz Cracker crumbs? Recently, I didn't have any suitable
bread crumbs on hand to use one time when made meatballs, so I
substituted Ritz Cracker crumbs instead. Made nice meatballs . I
wonder how that'd work as a coating for fish? Just an idea.

For many reasons we missed having a corned beef dinner on St. Patrick's
Day, although I had two briskets in the freezer.
Tonight it's corned beef with red potatoes, carrots, cabbage, rutabaga,
parsnips, and onions. I pretty much followed the Bon Appetit recipe with
Guinness, but my own varitions on spice blends.
The corned beef is done, and the nut that I am, I cook each vegetable
individually so that they're all at exactly the texture I prefer. It
smells heavenly, and I can't wait to dig in as soon as the last of it is
done.
David will eat the vegetables but not the corned beef. His pholosphy...if
the meat is pink it must still be raw, in spite of the fact that it
simmered for ~3 hours! How crazy is that? He'll be having hot dogs. :-)
They're pink inside. Makes no sense to me. :-)

Here's our favourite:
1 lb. fish filets
salt & pepper
1/2 cup whole wheat cracker crumbs
1/2 cup cashew nuts, ground
1/2 cup pecans, ground
all purpose flour
1 egg, beaten
vegetable oil for frying
Sprinkle fish filets with salt & pepper. Combine nuts and crumbs.
Dredge fish in flour, dip in beaten egg then in crumb & nut mixture.
Fry in vegetable oil until golden brown on both sides.

.. or do you?
Mimi Jardim's Cooking the Portuguese Way - In South Africa.
Found it when we went to a great fishmongers today that DH spotted on his
'travels' and said I'd love. He was right.
Ahem, we went there to buy some sole, yeah right... US$184.00 later, we
staggered to the car with our booty... Mitigation, not only do they have a
wonderful selection of fish and seafood - hey, they even had live oysters
in a tank; this is an Amazing Thing in the Johannesburg area
to boli> but I discovered that they stock all sorts of other imported
goodies too. Saw some Mae Ploy stuff there , and
many other foodie delights e.g. pickled ginger (gari), a wonderful
selection of imported soy sauces, olive oils etc. etc.
Anyway, on the way out I spotted the above mentioned cookbook (can't wait
to try the recipes) on a stand near the checkout... Also picked up a copy
of "Fish in a Flash" which is a 'homemade' cookbook (think
photocopies/ring binders) that is produced by the WIZO Johannesburg ladies
- some good stuff in there too.
Heh. I have no room left in my freezer (and DH has hidden his credit card
from me), or I'd go back there again tomorrow ;)

The price of my I Can't Believe It's Not Butter tub just jumped from
$2.49 to $3.09 since yesterday. That's more than a 24%% increase.
Crazy. I'm scared of the dairy section at this point.

"Dr. Bronner's accuses these companies, which include Kiss
My Face, Stella McCartney America, Estee Lauder and Hain
Celestial Group, of using petroleum-based ingredients in their
potions. That, according to Dr. Bronner's, means they are
falsely advertising themselves as organic manufacturers."
I find this interesting; in the past I never used many Dr Bronners
products but I have just switched over to preferring their
"Baby Mild Unscented" bar soap over the competition.
