I actually think this is a really bad example. The makers of the new
Who contradict themselves all the time, to the point where I don't
trust any absolute they state anymore (including the big one at the
end of this season).

I don't know enough about BG (either version) to really address this

And they were, in canon. The movies are not canon.

Yes, but Word of God (i.e. the creators) has said Aang is the last,
and since the show has not contradicted that EVER, I see no reason to
just ignore it because you find it inconvenient. Especially since the
show handed us a nice deus ex machina (kind of literally, if you look
at Aang as a Messiah figure) that could easily lead to recreating the
Air Nomads.
