i think they may have been talking about the fact that the bulk of
foods are processed.
corn syrup, for instance, does not have any fibre or useful nutrition,
but it's in a plethora of junk food that your body cannot process as
easily as whole foods.
the major constituent of soy that is used is the oils and lechitin,
not the whole soy bean. it's in cheap foods because the soy oil is
cheaper than say, safflower oil. eating a cookie with soy oil in it
is not as healthy as eating edamame.
where does the useful nutrition go? well, the important thing is that
people who eat that garbage don't really care.
