Stay away from the 12 volt drip coffee makers. They are very, very slow.
Mine took 45 minutes to make 4 cups of brown water that looked almost like
coffee in dim light but tasted like hot water.
I generally filled a thermos of coffee at truck stops and used a 12 volt
immersion heater to heat up coffee from the thermos.
If you get a big enough power inverter you can use a normal 120 volt coffee
maker in the truck.
