That seems like a terrible and glaring omission! Is there another solution
which could do this?

Use a an antispam proxy like SpamBayes or a tool like MailWasher.

I am using one - K9. It doesn't delete mail though (as it's only a proxy),
and I can't use a proxy on my phone.

Apparently it doesn't delete from the server, though, and that's what you
need. Others, like MailWasher, do.
