Category names are stored twice, once in the Master Category List and once
with an appointment in your calendar if you assign the category to it.

Where do you see disappearing or changed names, in the Master Category List
(click the Categorize button, then All Categories to see that) or in your
appointments (shown in the calendar folder or ir you open that appointment)?
