OK but I see a choice between "Install upgrade" and "Custom". Choosing Custom
brings me to a scren with a first tab "Install upgrade" and 3 radiobuttons.
The last one says "Remove only following applications: Excel, Onenote,
Powerpoint, Word". I guess to check only Onenote, and leave the other 3
empty. But in another tab you can set "Installation Options": some are white,
some gray for all Office applications irrispective of my choice on the first
tab (only Onenote).
So I stay suspicious because I absolutely can not afford loosing my
Word/Excel/PPT/Outlook 2003: I only want Onenote 2007

IMHO you're right to be suspsicious. My general layman's understanding of
microsoft programs is that they aren't "watertight compartments". Lots of
overlap, lots of shared resources (spellchecker dictionary comes to mind),
lots of one-part-needs-the-other-to-function-properly-or-at-all.
Unless you can be sure that all the parts will still play nice you probably
shouldn't mess with it.

If you happen to have another PC sitting around you might test it out there
-- somewhere where things aren't critical.

Alternatively you could write microsoft directly and ask...
