TheMeadowlands Sports Complexis a sports and entertainment facility located in East Rutherford, New Jersey. The complex consists of three venues: Giants Stadium, the Meadowlands Racetrack and the IZOD Center Arena.Giants Stadium, is the home stadium for the New York Giants and New York Jets football teams of the NFL. Maximum seating capacity is 80,242, making it the second-largest NFL stadium. It is also the ninth-oldest stadium used by an NFL team. The stadium was one of the two U.S. sites for Live Earth 2007. Giants Stadium will be closed in 2010 when the New Meadowlands Stadium opens.The Meadowlands Racetrackhas a carnival atmosphere of rides, games and family entertainment held in conjunction with major horse races and events. Food and beverages of all kinds are available to keep you refreshed. From formal to casual, the Meadowlands feature a wide range of dining options to suit every taste and mood. TheIZODCenteris a multi-purpose indoor arena and is home to the New Jersey Nets NBA basketball team, and was also the home of the New Jersey Devils NHL hockey team and the mens basketball games of Seton Hall University. Official seating capacity is 19,040 for hockey; 20,029 for college basketball; 20,049 for NBA games; and a maximum 20,000 for concerts. The arena attracts spectators and fans from New Jersey and the entire New York Metropolitan Area.
As aSenior Executive Chefyou are the lead on-site Culinarian responsible for the proper production and presentation of all food in the facility. You will lead and train kitchen personnel and supervise/coordinate all personnel engaged in preparing and cooking foods in related culinary activities; estimate food consumption and requisition or purchase food, select and develop recipes, standardize production recipes to ensure consistent quality, establish presentation technique and quality standards, plan and price menus, ensure proper equipment operation/maintenance and ensure proper safety (HACCP) and sanitation in kitchen, based on ARAMARK Standards. You should spend no more than 25%% of your time cooking. You may oversee special catering events and may also offer culinary instruction and/or demonstrations of culinary techniques. The Senior Executive Chef directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases. This position will oversee all three of the Meadowlands venues and will report directly to the Regional Executive Chef.
Qualifications * AOS/BS in Culinary Arts or equivalent experience * Minimum 8+ years of industry & culinary management experience. * Ability to manage in a diverse environment with focus on client and customer service * Experienced with HACCP * Ability to control cost - food & labor * Understanding, support and development of sustainable cuisine * Experience in demonstration cooking * Menu writing and development ability * Computer literacy including word processing and presentation software * People management and culinary leadership experience * Personnel development and training. * Organizational skills and ability to introduce or implement and execute S & E culinary program and brand development. * P&L accountability and/or contract-managed service experience is desirable. * Working in a Union house environment.
