I would like more of Kirk's backstory to be revealed. We hardly know
anything about his upbringing. I want to know more about his parents,
and his brother, and that little blond lab technician that Gary set him
up with.

And what about Carol or Ruth?
His brother's kids. Peter wasn't the only one afaik.
How and when exactly did he leave that colony that was run by Kodos.
How well did he know Kevin Riley?
Did he come into contact with captain Garrovick in those days? Or wasn't it
untill he was stationed on the Faragut?
Questions, questions...

When did he leave Iowa? What was Iowa like in the 22nd century? Did it have
mutant potatoes? So many story possibilities ...

Maybe we could have a whole TV series about Kirk's boyhod, Star Trek: The
Wonder Years. Each episode ends with a leaden moral platitude. Maybe there
could be a spinoff about Kirk's maiden aunt who lives with two friends, one
of whom is ditzy and one who is rather mannish- Star Trek: The Golden Girls.
Maybe even a comedy about ancestors of Kirk and McCoy who ran a funeral
parlour, called "He's Dead, Jim".

I mean, who says Star Trek needs to be exciting sci-fi adventure? Let's
really push that envelope!
