"While lamb was (and is) most definitely important to the Seder meal,
it's not considered the "main dish", as the Seder ritualistic mean
contains several elements: Charoset, Baytzah, Zeroah, Karpas,
Maror, Chazeret (Zeroah being the roasted shankbone of a lamb, not an
entire legbone with big juicy meat attached as you are picturing)."
Johnw correctly wrote: "He would have been REQUIRED as a
faithful Jew, to eat lamb at least that once a year."

Not necessarily. The shankbone was symbolic - not all Jewish
households then (or even now) serve(d) lamb at the Seder.
