I made guacamole and beef fajitas. I also did some chilies rellenos de queso.
Since we have a large Mexican population here, getting fresh avocados, tomateos
(not tomatoes), and cilantro are not a problem. When the Princess was here
yesterday we called the The Crown pub in Thorpe le Soken, England. When we had
a starter there, I loved the stuffed peppers, so we called and asked what kind
of cheese they stuffed their peppers with. Believe it or not they told us
exactly how they prepared them, which wasn't Mexican but damned good.
