I'll tell you a secret Bill..here's what you do:
Get 2 handfuls of wood chips (I perfer hickory) into a bowl of water.
Get a foot and a half of aluminum foil. Place one handfull of the
woodchips onto the foil, then a handful of dry woodchips, then the
last remaining wet woodchips. Fold the foil in half and crimp all the
way around forming a tight seal. Lastly poke the top and the bottom
of the foil about a dozen times. Put this in your grill UNDER the rack
directly onto the burners on the LEFT side of the grill. Replace the
rack when your done.
Now get about 4 of the biggest pork chops you can find (the ones with
the pork loins still on them), sprinkle some salt, pepper, and a
little bit of oilve oil on each side. When your done, place them on
the RIGHT side of the grill.
