It's an acid Gordon, so you should be fine.

It's my understanding that wine turns to vinegar if you keep it too long.
As far as I know, vinegar can't go bad because it's already there. ;-)
I seem to remember that occasionally there might be some semisolid matter in
old vinegar. My mother used to refer to it as "mother", and simply strained
it out.

We, snip mint, crush it a little and drop a sprig in iced tea, but never
thought of mint sauce. I make pepper sauce, vinegar and a sprig of
crushed rosemary, and some garlic clove, and some sliced hot pepper,
let it stand a week or so, and put it in a cruet. It is good with bland
flavors, such as boiled potatoes, or on cooked greens, such as turnip,
collards, mustard. blake
