Winter has finally found us in Dallas! MAN is it cold! Frrezing drizzle
and rain all day. It's supposed to be even worse tomorrow. If the
electricity stays on, I'll do some more baking and cooking! I made the
sugar cookies today using coconut and almond. Pretty yummy!

Rachel's Spinach and Artichoke Dip

1 8 oz block of cream cheese, softened
1 c Montery Jack with Jalapeno cheese, shredded
1/2 c parmesan cheese
1/2 c sour cream
1/2 c mayonnaise
1 box frozen chopped spinach
1 jar artichoke hearts, rinsed well and chopped
1 T lemon juice
1 clove garlic, chopped
salt and pepper to taste

baguettes, sliced and toasted

Cream together the cheeses, sour cream, and mayo. Then add spinach, lemon
juiuce, garlic and artichoke hearts, s&p. Mix this all up well. Bake in
greased casserole dish at 375* for 30 minutes. Serve with baguettes, sliced
and toasted.

You will want to make at least a double batch of this, because it is SUPER!!
This is my d-i-l's recipe and a staple at every family get together now!

Pesto Puff Appetizer

These are pretty as well as delicious!

You will need:

puff pastery
pesto
sliced ham, thin slices
sliced swiss cheese

Lay the puff pastry flat on a cookie sheet. Cover with a layer of the
pesto. Then cover that with thin slices of ham. Then layer sliced swiss
cheese on top. Take one long side and roll jelly roll style until it is
half rolled. Then take the other long side and roll jelly roll style until
it is half rolled (the two sides will meet. Then cut into slices (like you
would cut a roll of cookies) and place on the cookie sheet. Bake at 400
until cheese has melted and pastry is golden brown. These are super easy to
make, and pretty impressive looking! Jane

Oven Fried Chicken

Ingredients
2 skinless chicken breasts
1 cup skim milk
2 egg whites
1 Tablespoon fresh parsley
1 teaspoon tarragon
1 clove garlic (minced)
2 teaspoons Worcestershire sauce
Dash of ground pepper
1/3 cup plain non-fat yogurt
1/4 cup corn flakes (crushed)
2 Tablespoons corn meal
Soak chicken breasts in skim milk. Mix egg whites, parsley, tarragon,
garlic, Worcestershire sauce, pepper, and yogurt. Remove chicken from
skim milk and brush with yogurt mixture. Roll chicken in crushed corn
flakes and dust with corn meal. Place on baking dish sprayed with
non-stick spray. Bake in 375-degree oven for 45 to 55 minutes.
