FRENCH KISSES (the dessert!)

INGREDIENTS:
3 egg whites room temperature
1/8 teaspoon salt
1 cup sugar
2 drops red food coloring
1 teaspoon almond extract
1 1/4 cups shredded coconut

DIRECTIONS:
Preheat oven to 300 degrees. Place the eggs whites in a
glass mixing bowl with salt Beat until the whites are
stiff. Slowly add 1 cup of sugar and the salt beating
constantly. Mix in food coloring, almond extract and
coconut using a slow deliberate mix to avoid deflating
the mixture. Drop the mixture from a teaspoon onto a
greased and well- floured baking sheet. Bake about 30
minutes. Turn oven off and let kisses continue to sit
in oven for 1 1/2 hours.

White Chocolate Lace Cups ( Use orange Paste Dye to change white
chocolate to the appropriate orange for Halloween.)

Prep Time: 15 min
Total Time: 15 min
Makes: 2 servings

2 squares BAKER'S Premium White Baking Chocolate

2 tsp. grated orange peel

1/4 cup thawed COOL WHIP Whipped Topping

1/4 cup raspberries

LINE each of two medium muffin cups with a piece of foil. Place in
freezer 5
min. Meanwhile, microwave chocolate in small microwaveable bowl on
MEDIUM
(50%%)
1-1/2 min.; stir until chocolate is completely melted.

DRIZZLE chocolate with a spoon onto bottoms and up sides of prepared
muffin
cups. Freeze 5 min. Carefully remove foil cups from pan; gently peel
off and
discard foil.

STIR orange peel into whipped topping; spoon evenly into chocolate
cups. Top
with the raspberries.

Prepare as directed, using 1/4 cup mixed fresh berries, such as
raspberries,

Shrimp-in-Love Pasta

Prep Time: 10 min
Total Time: 25 min
Makes: 2 servings

4 oz. linguine, uncooked

1 cup cleaned medium fresh shrimp

2 medium tomatoes, chopped (about 1 cup)

1/2 cup PHILADELPHIA Cream Cheese Spread

1-1/2 cups torn cleaned spinach

COOK linguine as directed on package.

MEANWHILE, heat large skillet on medium-high heat. Add shrimp,
tomatoes and
cream cheese spread; cook and stir 3 to 4 minutes or until shrimp are
cooked
through and mixture is well blended.

DRAIN pasta; place in large bowl. Add spinach; toss lightly. Stir in
shrimp
mixture.

HALLOWEEN FUN POPCORN CRUNCH

INGREDIENTS:
8 c Popcorn
1/2 c Salted pumpkin seeds
1/2 c Dried cranberries or raisins
1/2 c Banana chips;broken into pieces
1 1/2 c Sugar
1/2 c Corn syrup
1/4 c Water
1/4 c Butter
1 ts Vanilla

DIRECTIONS:
In large buttered bowl, combine first 4 ingredients; set aside.
In medium saucepan combine sugar, corn syrup and water; bring
to a boil. Cook, covered 3 minutes. Uncover and cook, without
stirring, until mixture reaches hard-ball stage, 4-5 minutes.
Add butter and vanilla; cook, stirring 1 minute. Pour over
popcorn mixture; toss quickly to coat. Turn mixture out onto
greased baking sheet and spread using buttered hands.
Cool and break into pieces.

Witches Pumpkin Cake for Samhain(Halloween)
Beat together:
3 large eggs
2 cups pumpkin
3/4 vegetable oil
1/2 cup of dark rum if you don't want to use alcohol use apple cider

Blend together and add to wet ingredients:
2 1/2 cups of flour
2 1/4 cups of sugar
1 1/2 teaspoons baking soda
1 1/4 teaspoon of salt
1 teaspoon of nutmeg or less if desired
1 teaspoon of cinnamon or less if desired

Then stir in 1 cup of golden raisins, dates or prunes or other candied
fruit.
1 cup of chopped walnuts with 1/2 cup of pecans for the top.
Pour into a greased and floured 9" X 13" pan and bake at 350 for 35-45
minutes.
I like to use a Bundt pan or the sunflower pan.
Top with Cream Cheese Frosting.
In Food Processor:
4 ounces cream cheese and 4 tablespoons of butter...unsalted
Add:
1/2 box of confectioner's sugar (1/2 pound)
1 Tsp of Vanilla
Food coloring is desired.
Spread frosting on cooled cake add chopped pecans. Toasted almonds and
coconut threads also make a nice topping.
Enjoy the season of the Witch.
