I put powdered mustard in my dressings to emulsify the oil/vinegar mix.
As long as the oil is dispersed in separate tiny globules, there's
nothing to congeal. One of the additives in commercial dressings is
probably an emulsifying agent that works even better than mustard.
("Better" here means longer; forever, in fact.) Read the ingredients
list carefully. One of the additives would probably serve as a decent
dish-washing detergent.
