Old Fashioned Oatmeal Raisin Cookies

Amount Measure Ingredient -- Preparation Method

1/2 cup unsalted butter -- at room temperature
1 cup cane or maple syrup
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups regular oatmeal (not quick cooking)
3/4 cup flour
1/2 cup raisins or dried currants
1 cup pecans or black walnuts -- coarsely chopped
1/2 cup unsweetened coconut -- optional
1 teaspoon table salt
1 teaspoon ground cinnamon

Preheat oven to 350 degrees.
In a medium bowl or processor, whip butter.
Add syrup, eggs, and vanilla, beating well.
In a second medium bowl mix together oatmeal, flour, raisins, nuts, coconut,
salt, and cinnamon.
With a wooden spoon, stir the oatmeal mixture into the butter combination
until moistened.
Prepare two baking sheets with parchment paper.
Using two teaspoons, drop dough onto baking sheets in mounds 1 inch apart.
Bake 12-15 minutes until golden. After 7 minutes switch the top sheet with
the bottom sheet to ensure even cooking.

Let cookies cool on baking sheet for a few minutes, then remove to a cooling
rack or plates. (If using a plates, do not stack cookies more than two high
until fully cooled.)
