Knights Earth Day Cookies* (Butter Cookies)

3 1/2 cups all-purpose flour
1 1/3 cups sugar
2 eggs
1 teaspoon salt
1 1/2 cups butter or shortening
2 teaspoons vanilla
1 cup powdered sugar
10 drops blue food coloring
1 tablespoon water

Mix cookie ingredients in a mixing bowl. add flour if sticky.
Using rolling pin to press dough, and use a 2 1/2 inch circle (use a cover
to a small jar) cookie cutter and cut out cookies until dough is gone.
Sprinkle flour below and above to do rolling pin pressing.
Remove cookies from cutting board using spatula or flat object.
Bake at 375
