Chocolate, Almond and Pepper Biscotti

2 cups sugar
4 eggs
500 grams plain flour
1 teaspoon baking powder
100 grams cocoa powder -- preferably dutched
400 grams whole almonds -- roasted and coarsely chopped
1 teaspoon cracked black pepper
1 egg white -- lightly beaten
Process eggs and sugar in a food processor until combined.
With motor running, add 1 cup of flour at a time, adding baking powder and
cocoa with last cup of flour. Process until combined.
Turn onto well floured board and work in almonds and pepper.
Knead dough, adding a little extra flour is necessary, until firm.
Divide dough into two pieces and shape each portion into a log.
Place on papered cookie sheet and brush with egg-white.
