I have just finished eating my first spinach omelet using frozen
(thawed and drained) spinach .
Result was pretty good but too time consuming for a work day.
I think I shall need to experiment with other omelet fillings again as
I need to break out of a rut.
Now I have most of a pkg of spinach left....
Smoothies?

heh.
My fave omelette is still a simple "omelette fine herbes", with fresh
herbs.

Te he, last night, we had fresh spinach (bagged from Tosca) with poached
eggies on toast ... luverly they were too!

Take said spinach and put it in a mixing bowl. Add some
sauteed on!on and some sausage bits (or sub some bacon),
Parmesan cheese, and salt and pepper. Slip this mix in
between some puff pastry or phyllo dough and bake until
golden brown. It's a nice appetizer or snack, and is good
warm or cool, but not straight from the fridge.

Half milk, half cream, with a butterfat content between 10.5
- 18%%.
It can't be whipped, but it's nice with coffee, or on cereal.
