Yes! I live on these...so easy to throw together when you come home tired
and hungry. Except I put a tsp of oil in a hot skillet to cook mine. I like
a crisp tortilla. Like you, I put whatever leftovers I have--chicken, even
fried rice-- along with sliced bell peppers, onions, cheese, etc., top with
another tortilla and cook until hot and crispy. I cut it in pizza-like
wedges, easier to dip. We call them Quesadillas. Kay-sah-dee-ahs. Chef
Bobbie Flay makes triple-deckers.
I like to make brekkie quesadillas too....scramba eggs, sausage, onions and
spicy tomato salsa.
