So I belong to a food co-op, and three of us went in on 15lbs of peanut
butter. It seemed like a good idea at the time. Anyway, now I have two and
a half quart jars of peanut butter. We can only eat so many PBJ sarnies...
Apart from the obvious, like Satay sauce, and PB cookies (which I do *not*
need to be eating, TJBM), anyone have any recipes or menu suggestions for
me?

Go long on peanuts.
You already have half the world supply ringfenced, and in a few days
time, when the supply situation becomes clear, you'll make a mint.

Nope, sorry. You have to remember that our PB is not like your PB at
all, it is thicker and has more "body" somehow. I know this because
Klute sent a food parcel once with some Merkan PB in that was the
smoothest and creamiest I have ever had. I suspect ours is adulterated
with corn starch or emulsifier or some other ghastly stuff.

Slap a big wodge of it on the roof it's mouth and then sit back and watch the
fun. It's better than the telly some nights ;-) . It keeps our big lump happy
for up to 10 minutes at a time! :-)I swear her tongue is directly connected to
her tail as both fly around in wild circles. Mind ewe, we do have to stay well
out of range as Lab tails leave bruises when they hit you across the shins!

I just do a satay thing with pork tenderloin and use about a half cup
at a time.
Oh...and sometimes I've made a Thai sort of coleslaw with hot sauce
and lemon juice a PNB on purple cabbage.

This easy-peasy recipe works nicely with chicken or Quorn chunks. You
can either cut your chicken into cubes or casserole chicken joints; both
work.
Prepare your veg; I suggest mushrooms & onions.
Brown the chicken ( or Quorn). Put in casserole dish. Saute the veg.
Put them in casserole dish too.
Get a jar of passata & pour most of it over the chicken. Add two or
three tablespoons of peanut butter with the aim of stirring it into the
passata (ok, this is hard to do while it's still cold). You'll also
need to add a bit of water to stop the sauce catching.
Season according to taste.
Cook in oven for an hour-ish. Or on hob, if on very low heat.
