Why, when people are so careful about how long opened jars of stuff
are kept before chucking do so many people keep opened bottles of
Heinz ketchup in the cupboard, unrefrigerated, often for months on
end? It quite clearly says on the bottle to refrigerate after
opening, and according to the ingredients listing it contains no
preservatives or antioxidants.
I don't understand it.

Me too. Since ketchup keeps more or less indefinitely[1] anyway, there
seems little point in attempting to extend its life by keeping it
slightly colder.

I have never read the small print and yes, I do have sauce in the cupboard
for weeks....

I don't like cold ketchup on hot food, so I store it in the cupboard...never
had it go bad. After all, many caffs and diners (around here anyway) always
keep it on the table...along with steak sauce (our brown sauce). Of course,
it gets used a lot faster.
Does your brown sauce label say to refrigerate?
Ketchup is a very acidic product, maybe that would keep it from going
bad...would keep bacteria at bay.

No it doesn't, but Heinz Salad Cream does.

Indeedy ... my fave is the sticker on the Suzuki Hayabusa (early ones do
200 mph +, later ones are restricted to 186 mph) ... "Do not operate
this motorcycle while under the influence of alcohol or drugs" ... yeah,
coz if you're the sort of person who likes riding a 200 mph bike while
stoned and/or pissed, a sticker is *so* going to make you think twice :)
