The owner of the li'l supermarket in the town saw me looking at the
ham/pate/smoked salmon (smoked salmon was same price as ham) and
whispered "pszzt! wanna fresh fish? got some fresh sole in the back"[0].
I put down the salmon and said yes gleefully. He brought out a small
fish of the sole family, indeed very fresh - caught in the estuary and
landed at the small port just down the road. He skinned it and took out
the squidgy bits.
I have cooked it in butter with the merest delicate dusting of black
pepper; sauteed potatoes, a little salad, and some very crusty baguette.
