I can cook just about anything, but I'm struggling with something as
simple as poaching eggs ... I'm talking here about the "classic" method,
in water, rather than using a cheaty poaching dish.
So I've got my water "barely simmering", my eggs are eggstra fresh, no
vinegar or anything else in the water, all as Delia says to do (and
she's usually pretty good at this sort of thing).
And yet my poached eggs are thin and fried egg shaped, not the rounded,
deeper things I've seen in restaurants before.
Anyone got any ideas what's going wrong? I fancy doing Eggs Benedict
with proper hollandaise and poached properly, but it's not happening for
me. I might as well be frying them.

[1] why do people say that? It's not like daisies are especially fresh
... I mean a 3 day old daisy is just 3 days old

Do you not have to stir the water around to make it swirl so when you drop
the egg into the middle
the white sort of wraps around the yolk?
Mind you, as I've previously admitted, I can't cook eggs properly in any
shape or form so my suggestion
should probably be discarded.
