The spaghetti with prawns, rocket and chilli from Jamie's Italy (or
rather "Spaghetti con Gamberetti e Rucola"), ... I thought I might have
posted it before, but google says "no", so I've searched and someone's
already typed it out on the net previously - it's *so* quick, and *so*
simple, and so lovely. I think it's the lemon zest and juice that make
it; they keep it from becoming yet another heavy pasta dish.

455g dried spaghetti (I like linguine too)
sea salt + freshly ground black pepper
extra virgin olive oil
2 cloves garlic, finely chopped
1-2 dried chili, crumbled (I prefer 1 hot red fresh chilli, finely
chopped)
400g peeled raw prawns
1 small wineglass white wine
2 heaped tablespoons sun-dried tomato puree/paste
zest + juice of 1 lemon
2 handfuls of rocket, roughly chopped

Cook spaghetti in salted water as per packet instructions. Meanwhile,
heat 3 glugs of olive oil in a large frying pan + toss the garlic and
chili. As garlic begins to colour, add prawns and saute them for a
minute. Add the wine and tomato puree and simmer for a couple of
minutes. When the pasta is ready, drain it in a colander, reserving a
little of the cooking water. Toss the spaghetti with the sauce, squeeze
in the lemon juice, add half the chopped rocket, adding a little of the
reserved cooking water if you want to loosen the sauce a bit, and
correct the seasoning. Divide between 4 plates and sprinkle with the
grated lemon zest and the rest of the rocket.

It's just the bestest :)
