Bear in mind that in a lot of cheap restaurants, the basic main
ingredient will be the same, and they'll just slop a different sauce on
it.

Agree 100%%%%.

We have the Sree Krishna near us, in Tooting, SW London (Google for it;
it must be there). Renowned South Indian cooking, specialities are
vegetarian, although there's plenty for the carnivores. And when we go
there we do exactly what you suggest.
