There are all sort of factors affecting breads longevity. However, one of the main ones is how much fat there is in the bread. Apparently in prisons they bake bread with no fat at all. This means that its quite edible of the day its made but becomes inedible by the next day. Therefore it can't be stockpiled for use in a hostage or barricade situation.
