I would offer a much more simple ... if not simplistic ... explanation for Hebrew LiVYaTan. It is a (sea) jackal (Hebrew TaN) that accompanies you (as in L'ViYa) at sea, probably a pilot whale, where pilot is a reversal of dolphin. Both TaN (jackal) and TaNiN (crocodile) have very visible teeth (SHeN) ... at a time when the Hebrew letter shin had a D/T-sound, as in SHoR was ToR as in Taur(us
